Calzone mortadella

The Calzone is appreciated for its gourmet and warm side but especially for the originality of its shape which makes it nice to eat! So get to work and enjoy it ;)




  • 1 ball of Neapolitan pizza dough (250 grams)
  • 80 grams of tomato sauce
  • 80 grams of mozzarella
  • 50 grams of mortadella
  • 4-5 fresh basil leaves
  • 1 tablespoon of olive oil




  • Preheat the FlameOven pizza oven for 15-20 minutes.
    is the time needed for the oven to reach 400°C.

  • Meanwhile, flatten and stretch the dough ball to make a 30cm pizza base.

  • Lay the pizza base flat on your work surface, then using a small ladle, pour the tomato sauce over one half of the pizza. Using the back of the ladle, make concentric circles to spread the sauce, ending 2cm from the edge.

  • Then add the mozzarella, mortadella, a dash of olive oil and a grating of parmesan.

  • Once the pizza is topped on one side, fold your pizza by putting the edges of the empty part on the topped part. Once the pizza is folded, it is important to close it well. 

  • To seal the edges of the pizza, make a slight fold, take a fork and press the fork onto the fold of the dough. This will seal the dough.
  • Slide the pizza onto your pizza peel, then place the pizza in the oven, remembering to rotate it every 30 seconds. This will ensure even cooking and prevent any parts from burning. 

  • Once the crust has taken on a certain colour and is cooked through (2 minutes), remove the pizza from the oven.
